A milling and baking specialist is a food scientist who specializes in milling and baking. Duties may include the following:
- Develops and promotes new value-added products and processes for small grains.
- Provides training and technical assistance for cereal grain production, elevator, milling, and baking industries.
- Supports market initiative and value recovery programs
- Provides technical assistance for the milling and baking industries.

Preparation
Education required is a bachelor's or master's degree in cereal science, food science or related field, along with experience in the manufacture and product development of value-added cereal grain products; experience and training in milling and baking technology and operations; experience in quality management. Some professional certification may also be required.
