15-Bean Soup

  • 20 ounces assorted dried beans, rinsed and soaked overnight
  • 1 large ham bone, ham hocks or sliced ham
  • 1 large onion, chopped
  • 15 ounce can diced tomatoes
  • 1 teaspoon chili powder
  • Juice of a lemon
  • 1-2 cloves garlic, minced
  1. Drain and rinse the soaked beans.
  2. Put the beans in a large pot or Dutch oven.
  3. Cover with two quarts of water
  4. Add the ham.
  5. Add the onion.
  6. Bring to a boil, reduce heat and let simmer for 2 ½ hours.
  7. Add the tomatoes, garlic, chili powder and lemon juice and let simmer for another 30-60 minutes until all the beans are tender.
